Chop the Vegetables

Wash and chop all vegetables into bite-sized pieces. Prepare carrots, celery, potatoes, zucchini, green beans, and onion. Mince the garlic.

Heat Oil

In a large pot, heat the olive oil over medium heat.

Cooking

Sauté the Onion and Garlic

Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.

Add Remaining Vegetables

Stir in the chopped carrots, celery, potatoes, zucchini, and green beans. Cook for another 5 minutes, stirring occasionally.

Add Broth and Seasonings

Pour in the vegetable broth and add dried thyme, salt, black pepper, and the bay leaf. Stir to combine.

Simmer the Soup

Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.

Add Spinach

In the last 5 minutes of cooking, add the spinach to the pot. Stir until wilted.

Taste and Adjust Seasoning

Taste the soup and adjust seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
