Prepare the Marinade

In a medium bowl, whisk together the olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper until well combined.

Marinate the Pork Chops

Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, making sure they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

Cook the Pork Chops

Remove the pork chops from the marinade and discard the marinade. Grill the pork chops for about 6-8 minutes on each side, or until they are cooked through and have nice grill marks. The internal temperature should reach 145°F (63°C).

Prepare the Vegetables

While the pork chops are grilling, toss the asparagus and halved cherry tomatoes with a little olive oil, salt, and pepper. Grill them for about 4-5 minutes until the asparagus is tender and the tomatoes are slightly charred.

Serve

Once the pork chops are done, let them rest for 5 minutes before serving. Plate the pork chops alongside the grilled asparagus and cherry tomatoes.
