For the O-Rings

    Prepare the Onions

    Peel the onions and slice them into thick rings, about 1/2 inch wide. Separate the rings carefully and set them aside.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix well to combine. Gradually add the cold water to the dry ingredients, whisking until you achieve a smooth batter.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a kitchen thermometer.

    Batter the Onions

    Dip each onion ring into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

    Fry the O-Rings

    Carefully place the battered onion rings in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and transfer to a paper towel-lined plate to drain.

    In a small bowl, combine the mayonnaise, smoked paprika, garlic powder, hot sauce, and lemon juice. Mix well until all ingredients are thoroughly combined.
