Prep the Potatoes

Wash and Peel
Begin by washing the Russet potatoes thoroughly under cold water. Peel the skin off using a vegetable peeler, if desired.

Cut into Fries
Cut the potatoes into even strips, about 1/4 inch thick, to ensure even cooking.

Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
Prepare the Seasoning

Mix the Seasoning
In a small bowl, combine salt, paprika, garlic powder, onion powder, and black pepper. Mix well and set aside.
Fry the Potatoes

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture. This step is crucial for achieving crispiness.

Fry the Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 5-6 minutes or until golden brown.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain. While they are still hot, sprinkle Papa's seasoning over the fries to taste.

Repeat the frying process with the remaining batches of fries until all are cooked.
