Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with unsalted butter and dust with flour to prevent sticking.

  2. 2

    Melt Butter and Chocolate

In a medium microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture while whisking continuously until well combined.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold everything together until just combined.

Baking

  1. 6

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes.

  4. 9

    Serve

Run a knife around the edges of each cake to loosen them. Invert each ramekin onto a plate, dust with powdered sugar, and serve immediately with a scoop of vanilla ice cream.
