Preparing the Beans

Soak the Beans
Rinse the dried pinto beans under cold water to remove any dirt or debris. Place them in a large bowl and cover with 8 cups of water. Soak the beans overnight to rehydrate them.

Cook the Beans
After soaking, drain and rinse the beans. In a large pot, add the soaked beans and cover them with fresh water (about 8 cups). Bring to a boil over high heat, then reduce to a simmer. Cook for about 1.5 to 2 hours or until the beans are tender.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5-7 minutes until softened and translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Mash and Combine
Using a potato masher or the back of a fork, mash the beans to your desired consistency. If the mixture is too thick, add some of the reserved cooking liquid to achieve the desired creaminess.

Season the Beans
Stir in the cumin powder, salt, black pepper, and lime juice. Mix well and adjust seasoning to taste. Cook for an additional 5 minutes on low heat, stirring occasionally.
