Prepare the Beans
Rinse the pinto beans under cold water to remove any dirt or impurities. Check for any small stones or debris and remove them.

Soak the Beans
Place the rinsed beans in a large bowl and cover them with water. Allow the beans to soak for at least 6 hours or overnight. This helps to soften the beans and reduce cooking time.

Cook the Beans
Drain the soaked beans and add them to the pot with the sautéed onions and garlic. Pour in 6 cups of fresh water, add salt, black pepper, cumin, and bay leaf. Bring to a boil, then reduce the heat to low and cover the pot. Let the beans simmer for about 1.5 to 2 hours, or until they are tender.

Finish the Dish
Once the beans are cooked, remove the bay leaf. Adjust seasoning with additional salt and pepper if necessary. Stir in chopped fresh cilantro before serving.
