Press the Tofu
Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top, such as a cast-iron skillet, for about 15 minutes.

Prepare Chipotle Sauce
In a small bowl, mix the chipotle peppers in adobo sauce, soy sauce, lime juice, salt, and black pepper. Set aside.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5-7 minutes, or until they are softened and translucent.

Add Tofu
Once the tofu has been pressed, cut it into cubes and add it to the skillet. Gently toss to combine with the vegetables.

Add Chipotle Sauce
Pour the chipotle sauce mixture over the tofu and vegetables. Stir gently to coat everything evenly. Cook for another 5-7 minutes, allowing the tofu to absorb the flavors and become slightly crispy.
