    Prepare the Marinade

    In a medium bowl, combine soy sauce, brown sugar, ketchup, rice vinegar, minced garlic, grated ginger, Hawaiian sea salt, black pepper, and pineapple juice. Whisk until well combined and the sugar is dissolved.

    Marinate the Chicken

    Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grilling

    Preheat the Grill

    Prepare your grill for medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed and ash-covered.

    Grill the Chicken

    Remove the chicken from the marinade, letting excess marinade drip off. Place the chicken skin-side down on the grill. Grill for about 6-8 minutes until the skin is crispy and golden brown.

    Flip and Cook

    Flip the chicken thighs and continue to grill for an additional 6-8 minutes, or until the internal temperature reaches 165°F (75°C).

    Rest and Serve

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute. Serve with extra marinade on the side if desired.
