    Preheat your oven to 425°F (220°C) to prepare for roasting the chicken.

    Rinse the free-range chicken under cold water and pat it dry with paper towels. Place it in a roasting pan.

    Create Marinade

    In a small bowl, mix the olive oil, minced garlic, juice from the lemon, chopped rosemary, salt, and black pepper to create a marinade.

    Marinate the Chicken

    Rub the marinade all over the chicken, making sure to get some under the skin for extra flavor.

Vegetable Preparation

    Prepare the Vegetables

    Peel and chop the carrots, potatoes, and onion into bite-sized pieces. Place them around the chicken in the roasting pan.

    Sprinkle fresh thyme over the vegetables and drizzle with olive oil, season with salt and pepper to taste.
