Marinate the Fish
In a large bowl, combine olive oil, lime juice, ground cumin, paprika, salt, and black pepper. Whisk together until well combined. Add the fish fillets to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.

Prepare the Cabbage Slaw
In a separate bowl, mix together the shredded cabbage, shredded carrot, and chopped cilantro. In a small bowl, combine the sour cream, minced garlic, and chipotle in adobo sauce. Stir until the chipotle sauce is well mixed with the sour cream. Add this sauce to the cabbage mixture and toss to combine. Set aside.

Assemble the Tacos
To assemble the tacos, flake the grilled fish into bite-sized pieces and place them onto the warm corn tortillas. Top with the cabbage slaw and additional chipotle sauce if desired. Serve immediately.
