    Marinate the Fish

    In a large bowl, combine olive oil, lime juice, ground cumin, paprika, salt, and black pepper. Whisk together until well combined. Add the fish fillets to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.

    Prepare the Cabbage Slaw

    In a separate bowl, mix together the shredded cabbage, shredded carrot, and chopped cilantro. In a small bowl, combine the sour cream, minced garlic, and chipotle in adobo sauce. Stir until the chipotle sauce is well mixed with the sour cream. Add this sauce to the cabbage mixture and toss to combine. Set aside.

    Grill the Fish

    Preheat the grill to medium-high heat. Remove the fish from the marinade and place it on the grill. Grill for 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let it rest for a couple of minutes.

    Warm the Tortillas

    While the fish is resting, warm the corn tortillas on the grill for about 30 seconds on each side or until pliable. Alternatively, you can warm them in a skillet over medium heat.

    Assemble the Tacos

    To assemble the tacos, flake the grilled fish into bite-sized pieces and place them onto the warm corn tortillas. Top with the cabbage slaw and additional chipotle sauce if desired. Serve immediately.
