1. Prepare the Noodles
Cook the wide rice noodles according to package instructions, drain, and set aside.
2. Stir-Fry the Vegetables
In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and bird's eye chili, stir-frying for about 30 seconds until fragrant.
3. Add the Vegetables
Add the sliced red bell pepper, julienned carrot, and broccoli florets to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
4. Combine Ingredients
Add the cooked noodles to the wok along with the soy sauce, oyster sauce, fish sauce, and sugar. Toss everything together until well combined and heated through.
5. Finish with Basil
Remove from heat and stir in the basil leaves until wilted. Adjust seasoning with more chili or sauces, if desired.
6. Serve
Serve hot, garnished with additional basil if desired.
