    Prepare the Ingredients

    Start by dicing the guanciale into small pieces. Grate the Pecorino Romano cheese and set aside.

    Cook the Spaghetti

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

    Render the Guanciale

    In a large skillet over medium heat, add the guanciale and cook until crispy and golden brown, about 5-7 minutes. Remove from heat.

    Combine Pasta and Guanciale

    Once the spaghetti is cooked, reserve about 1 cup of pasta water. Drain the spaghetti and add it directly to the skillet with the guanciale. Mix well to combine.

    Create the Sauce

    Add the grated Pecorino Romano cheese and a generous amount of freshly ground black pepper to the pasta. Pour in reserved pasta water gradually, stirring continuously until a creamy sauce forms. Adjust the consistency with more pasta water if necessary.

    Plate the spaghetti, adding extra Pecorino Romano and black pepper on top to taste. Serve immediately.
