Prepare the Eggplant
Preheat the oven to 400°F (200°C). Slice the eggplants lengthwise into 1/4 inch thick slices. Sprinkle with salt and let them sit for 20 minutes to draw out moisture. Rinse and pat dry.

Cook the Eggplant
Brush the eggplant slices with olive oil and place them on a baking sheet. Bake in the preheated oven for 20 minutes, flipping halfway through, until they are tender and slightly golden.

Make the Filling
In a mixing bowl, combine ricotta cheese, chopped fresh basil, salt, and black pepper. Mix until well combined.

Assemble the Rollatini
Spread a thin layer of San Marzano tomato sauce on the bottom of a baking dish. Take a baked eggplant slice, place a spoonful of the ricotta mixture at one end, and roll it up. Place seam-side down in the baking dish. Repeat with the remaining eggplant slices.

Top and Bake
Pour the remaining San Marzano tomato sauce over the rolled eggplants. Sprinkle mozzarella and Parmesan cheese on top. Bake in the oven for an additional 25 minutes or until the cheese is bubbly and golden.

Let cool for a few minutes before serving. Garnish with additional fresh basil if desired.
