Cooking Instructions

  1. 1

    Prepare the Meatballs

In a bowl, combine ground beef, Graziano sausage, bread crumbs, egg, minced garlic, salt, and pepper. Mix well and form into small meatballs.

  2. 2

    Cook the Meatballs

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and cook until they are browned on all sides. Remove and set aside.

  3. 3

    Make the Ragu

In the same skillet, add the remaining olive oil and sauté chopped onion until translucent. Add crushed tomatoes, oregano, salt, and pepper. Stir to combine.

  4. 4

    Simmer the Sauce

Add the browned meatballs back to the skillet, cover, and let simmer on low heat for about 30 minutes.

  5. 5

    Cook the Rigatoni

In a large pot, bring salted water to a boil. Cook rigatoni according to package instructions until al dente. Drain and reserve some pasta water.

  6. 6

    Combine Pasta and Sauce

Add the drained rigatoni to the ragu sauce. Toss to combine, adding reserved pasta water if needed for a smoother sauce.

  7. 7

    Serve

Plate the rigatoni, dollop with ricotta, and sprinkle with grated Parmesan cheese before serving.
