Prepare the Ingredients
If using chicken, pound the breasts to even thickness. If using eggplant, slice into 1/2-inch thick rounds. Season both sides with salt and black pepper.

Bread the Chicken/Eggplant
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each piece of chicken or eggplant in flour, dip it in the egg, then coat it in breadcrumbs.

Pan Fry
Heat olive oil in a large skillet over medium heat. Fry the breaded chicken or eggplant until golden brown and cooked through (about 4-5 minutes per side). Remove and place on paper towels to drain excess oil.

Cook the Rigatoni
In a large pot, bring salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.

Assemble the Dish
In a serving plate, place a portion of rigatoni, top with Neapolitan Ragu sauce, and then add the fried chicken or eggplant. Place slices of fresh mozzarella on top and sprinkle with fresh basil leaves.
