Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the gluten-free graham cracker crumbs, melted butter, and 1/4 cup of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the remaining 3/4 cup of sugar, and mix until well incorporated. Add the sour cream, vanilla extract, and cornstarch; mix until smooth. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Combine and bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and chill
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour. Then, refrigerate for at least 4 hours or overnight to fully set.

Serve
Once chilled, remove the cheesecake from the springform pan. Top with Luxardo cherries before slicing and serving.
