    Prepare the Veal

    Season the veal chops with salt and pepper on both sides.

    In three separate bowls, place flour, beaten eggs, and breadcrumbs. Dredge each chop in flour, dip in eggs, and coat with breadcrumbs.

Cooking

    Fry the Veal

    In a large skillet, heat the olive oil over medium-high heat. Fry the breaded veal chops for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Top the fried veal with baby arugula, grated Grana Padano cheese, and halved cherry tomatoes. Squeeze fresh lemon juice over the top before serving.
