Pasta and Ragu

Method

Preparation

  1. 1

    Prepare the Ragu

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

  2. 2

    Cook the Meat

Add the ground veal, pork, and beef to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

  3. 3

    Add Garlic and Wine

Stir in the minced garlic and cook for 1 minute. Pour in the red wine and let it simmer until reduced by half.

  4. 4

    Add Tomatoes

Add the crushed tomatoes to the skillet. Season with salt and black pepper. Reduce the heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.

  5. 5

    Cook the Pasta

While the ragu is simmering, bring a large pot of salted water to a boil. Add the mezza rigatoni and cook according to the package instructions until al dente. Drain the pasta.

  6. 6

    Combine and Serve

Add the cooked pasta to the ragu and toss to combine. Serve hot, topped with grated Grana Padano cheese and fresh basil leaves.
