Preparation Steps

  1. 1

    Make the Croutons

Preheat the oven to 375°F (190°C). Cut the focaccia bread into small cubes. Toss the bread cubes in 1 tablespoon of olive oil and season with salt and pepper. Spread them on a baking sheet and bake for about 10-12 minutes until golden and crispy. Remove and let cool.

  2. 2

    Prepare the Dressing

In a bowl, combine the anchovy fillets, garlic clove (minced), Dijon mustard, Worcestershire sauce, lemon juice, and remaining 2 tablespoons of olive oil. Whisk until smooth. Season with salt and black pepper to taste.

  3. 3

    Assemble the Salad

In a large salad bowl, combine the chopped romaine lettuce and croutons. Pour the dressing over the salad and toss to coat evenly. Top with shaved Grana Padano cheese.

  4. 4

    Serve

Serve immediately as a fresh and crisp salad.
