    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes. Toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 25-30 minutes until golden and tender.

    Prepare the Broccoli Rabe

    While the potatoes are roasting, bring a pot of salted water to a boil. Add the broccoli rabe and blanch for about 2 minutes. Drain and immediately transfer to an ice bath to stop the cooking. Once cooled, drain again and set aside.

    Assemble the Saltimbocca

    Lay out the prosciutto slices. Place a sage leaf on each slice of prosciutto. Cut the mozzarella into 8 thin slices and place one slice on each prosciutto-sage stack.

    Cook the Saltimbocca

    In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Once hot, carefully place the prosciutto stacks in the skillet, cooking for about 3-4 minutes on each side until the prosciutto is crispy and the cheese is melted.

    Serve

    Serve the saltimbocca alongside the roasted fingerling potatoes and the blanched broccoli rabe. Drizzle with additional olive oil and season with salt and pepper to taste.
