    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add Garlic and Sausage

    Add minced garlic and cook for another minute until fragrant. Then, add the ground sausage, breaking it apart with a spoon, and cook until browned.

    Combine Tomatoes and Seasonings

    Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. If using, add red wine for extra flavor.

    Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook slowly for at least 1.5 hours, stirring occasionally. The longer it simmers, the better the flavor.
