    Prepare the Gnocchi

    Peel and boil the potatoes until fork-tender. Drain and let them cool slightly. Mash the potatoes until smooth, then let them cool completely.

    Make the Dough

    Once the potatoes are cool, mix them with gluten-free flour, salt, and pepper to form a dough. Knead lightly until it comes together, being careful not to overwork it.

    Shape the Gnocchi

    Divide the dough into small pieces (about the size of a golf ball). Roll each piece into a long rope and cut into small pieces to form the gnocchi. Use a fork to create ridges on one side.

    Prepare the Sauce

    In a saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant. Add the San Marzano tomatoes and season with salt, pepper, and fresh basil. Simmer for about 10 minutes.

    Assemble the Dish

    Preheat the oven to 180°C (350°F). In a baking dish, layer the tomato sauce and gnocchi. Tear buffalo mozzarella and scatter on top. Sprinkle with grated Parmesan cheese.

    Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

    Remove from oven, let it cool slightly, then garnish with fresh basil before serving.
