    Roasting the Potatoes

    Preheat the oven to 200°C (400°F). Wash the fingerling potatoes and cut them in half lengthwise. Toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 25-30 minutes, or until golden and tender.

    Preparing the Mushrooms

    While the potatoes are roasting, clean the mushrooms and cut them into halves or quarters depending on their size. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

    Cooking the Mushrooms

    Add the mushrooms to the skillet and sauté for about 5-7 minutes until they are browned and have released their moisture. Season with salt and black pepper.

    Making the Marsala Demi Glace

    Pour in the Marsala wine and vegetable broth. Bring the mixture to a gentle boil, then reduce to a simmer. Allow it to cook for about 10-15 minutes until the sauce has thickened slightly.

    Stir in the fresh thyme and adjust seasoning if necessary. Serve the roasted mushrooms over the roasted fingerling potatoes, drizzled with the Marsala demi-glace.
