    Prepare the Potatoes

    Peel the potatoes and cut them into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter and heavy cream to the potatoes, mashing until smooth. Season with salt and pepper to taste.

    Cook the Filet Mignon

    Season the filet mignon with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Sear the filet for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Prepare the Broccoli Rabe

    In the same skillet, add the broccoli rabe and sauté for 3-4 minutes until tender. You may add a pinch of salt for seasoning.

    Fry the Shallots

    Thinly slice the shallots. In a small pan, heat enough oil to deep fry. Fry shallots until golden brown, about 2-3 minutes. Drain on paper towels.

    Plate the Dish

    On a plate, place a generous scoop of whipped potatoes, top with the filet mignon, drizzle with demi glaze, and garnish with crispy fried shallots. Serve with sautéed broccoli rabe on the side.
