    Prepare the Blood Orange Reduction

    In a saucepan, combine the blood orange juice, honey, and balsamic vinegar. Bring to a boil over medium heat, then reduce the heat and simmer until the mixture reduces by half and thickens, about 10-15 minutes. Set aside.

Mascarpone Fava Bean Risotto

    Cook the Risotto

    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent. Stir in the Arborio rice and cook for 2 minutes until the rice is lightly toasted. Gradually add the vegetable broth, one ladle at a time, stirring frequently until each addition is absorbed before adding the next. After about 15-20 minutes, when the rice is al dente, stir in the fava beans, mascarpone cheese, Parmesan cheese, salt, and black pepper. Cook for another 5 minutes until heated through. Remove from heat and set aside.

Seared Scallops

    Pan-Seared Scallops

    Pat the scallops dry with a paper towel and season with salt and black pepper. In a large skillet, heat the olive oil over high heat. Once hot, place the scallops in the skillet, leaving space between each. Sear for about 2-3 minutes on each side until golden brown and cooked through. Do not overcrowd the pan; you may need to do this in batches.

Plating

    Plate the Dish

    On each plate, spoon a generous portion of the mascarpone fava bean risotto. Top with 3-4 pan-seared scallops and drizzle the blood orange reduction over the scallops. Serve immediately.
