    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the ziti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Guanciale

    In a large skillet over medium heat, add the guanciale. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

    Combine Ingredients

    In the skillet with the guanciale, add the drained ziti. Toss to combine, ensuring the pasta is well coated in the rendered fat. Add the grated Pecorino Romano cheese and crushed black pepper, mixing well.

    Create the Sauce

    Gradually add reserved pasta water, a little at a time, while tossing the pasta to create a creamy sauce. Adjust the consistency to your liking.

    Serve

    Taste and adjust seasoning with salt and more black pepper if desired. Serve immediately with additional Pecorino Romano on top.
