Method

Preparing the Pork Chop

    Season and Grill

    Rub the pork chops with olive oil, salt, pepper, and rosemary. Preheat the grill to medium-high heat and grill the pork chops for about 6-7 minutes per side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let rest.

Making Spicy Caramelized Figs

    Cook Figs

    In a skillet, melt the butter over medium heat. Add the figs, honey, and chili flakes. Cook until the figs are caramelized and soft, about 5-6 minutes. Set aside.

Cooking the GF Potato Gnocchi

    Boil Gnocchi

    Bring a large pot of salted water to a boil. Add the gluten-free potato gnocchi and cook until they float to the surface, which takes about 2-3 minutes. Drain and toss with Parmesan cheese.

Making Brown Butter Sauce

    Brown the Butter

    In a saucepan, melt the butter over medium heat. Add the sage leaves and cook until the butter turns golden brown and has a nutty aroma, about 4-5 minutes. Remove from heat.

Roasting Cauliflower

    Roast the Cauliflower

    Preheat the oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.

Plating

    On a plate, arrange the grilled pork chop, top with spicy caramelized figs, serve alongside the potato gnocchi drizzled with brown butter sauce, and roasted cauliflower.
