Duck Confit and Dumplings

Preparation and Cooking

    Curing the Duck

    In a bowl, mix salt, minced garlic, thyme, and crushed black peppercorns. Rub this mixture over the duck legs and let them cure in the refrigerator for 24 hours.

    Cooking the Duck

    After curing, preheat the oven to 250°F (120°C). Rinse the duck legs under cold water and pat dry. Place them in a baking dish and cover with duck fat. Cook in the oven for 2-3 hours until the meat is tender and falls off the bone.

    Making Potato Dumplings

    Boil potatoes until tender. Peel and mash them. In a bowl, combine mashed potatoes, gluten-free flour, and egg to form a dough. Roll into small balls.

    Cooking Dumplings

    Bring a pot of salted water to a boil. Drop the dumplings in and cook until they float to the surface, about 3-4 minutes. Remove and set aside.

    Plating the Dish

    Shred the duck confit and arrange it on the plate with potato dumplings. Drizzle fig preserves and truffle honey over the top. Serve warm.
