    Make the Cannoli Shells

    In a bowl, mix the flour, sugar, cocoa powder, and salt. Cut in the butter until crumbly. Stir in the egg and wine until a dough forms. Wrap in plastic and refrigerate for 1 hour.

    Roll and Cut

    Roll out the dough on a floured surface until thin. Cut out circles (about 4 inches in diameter) and wrap around cannoli forms, sealing the edges with water.

    Fry the Shells

    Heat oil in a deep fryer to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Make the Ricotta Cream Filling

    In a bowl, mix ricotta, powdered sugar, and vanilla until smooth. Fold in chocolate chips, pistachios, and candied orange peel.

    Fill the Cannoli

    Once the shells are cool, fill a pastry bag with the ricotta cream and pipe into each shell.

    Serve

    Dust with powdered sugar and serve immediately, or refrigerate until ready to serve.
