Pasta Preparation

Boil Water
In a large pot, bring water to a boil. Add 1 tablespoon of salt.

Cook Pasta
Add 400 grams of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta and set aside, reserving a cup of pasta water.
Sicilian Sauce Preparation

Sauté Garlic
In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes
Add 500 grams of halved cherry tomatoes to the skillet. Cook until they begin to soften, about 5 minutes.

Mix in Capers and Olives
Stir in 2 tablespoons of capers and 100 grams of pitted black olives. Cook for another 2-3 minutes.

Season the Sauce
Add 1 teaspoon of red pepper flakes, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir to combine.

Add Fresh Basil
Tear the fresh basil leaves and add them to the sauce. Stir gently.

Combine Pasta and Sauce
Add the drained pasta to the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency. Toss well to combine.
Serving

Plate the Dish
Serve the pasta hot, garnished with 50 grams of grated Parmesan cheese and 10 fresh basil leaves.
