Prepare the Salmon

    Marinate the Salmon

    In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes.

    Grill or Cook the Salmon

    Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side for grilled salmon, or sauté in a skillet over medium heat for about 4-5 minutes on each side until cooked through. If using capers, add them to the skillet during the last minute of cooking.

    In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.

    Drizzle the dressing over the salad and toss gently to combine.
