Ravioli

Method

Ravioli Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs and olive oil. Mix with a fork until dough starts to come together.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Meat Filling Preparation

  1. 3

    Mix the Filling

In a bowl, combine the ground beef, ricotta cheese, grated Parmesan, egg, minced garlic, salt, and black pepper. Mix until well combined.

Meat Sauce Preparation

  1. 4

    Cook the Sauce

In a large saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent. Add minced garlic and cook for another minute.

  2. 5

    Add Meat

Add the ground beef to the saucepan and cook until browned. Drain excess fat if necessary.

  3. 6

    Simmer the Sauce

Stir in the canned crushed tomatoes, oregano, basil, salt, and pepper. Reduce heat to low and let simmer for 30 minutes.

Ravioli Assembly

  1. 7

    Roll Out Dough

After resting, divide the dough into four pieces. Roll out each piece on a floured surface until thin.

  2. 8

    Fill and Shape Ravioli

Place small spoonfuls of the filling onto the rolled-out dough, spacing them about 1 inch apart. Fold the dough over to cover the filling and press down to seal. Cut out individual ravioli with a pasta cutter or knife.

Cooking the Ravioli

  1. 9

    Boil the Ravioli

Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 4-5 minutes or until they float to the top.

  2. 10

    Serve

Drain the ravioli and serve topped with the meat sauce. Enjoy!
