Preparation

Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Let them marinate for about 15-20 minutes.

Prepare the Vinaigrette
In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined. Set aside.
Grilling

Grill the Chicken
Preheat your grill to medium-high heat. Place the seasoned chicken breasts on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

Add Provolone Cheese
In the last minute of cooking, place 2 slices of provolone cheese on each chicken breast and close the grill lid to melt the cheese.
Assembly

Assemble the Dish
On each plate, place a few lettuce leaves. Slice the grilled chicken breasts and arrange them on top of the lettuce. Add sliced tomatoes on top and drizzle with the vinaigrette dressing.
