Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

Once cooled, peel the potatoes and mash them in a large bowl until smooth.

Add the flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is too sticky, add more flour, a tablespoon at a time.

Divide the dough into four pieces. Roll each piece into a long rope, about ½ inch thick. Cut the ropes into 1-inch pieces. Use a fork to create ridges on each piece, if desired.

Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until coarsely chopped.
