Method

Preparing Gnocchi

  1. 1

    Cook the Potatoes

Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

  2. 2

    Mash the Potatoes

Once cooled, peel the potatoes and mash them in a large bowl until smooth.

  3. 3

    Make the Dough

Add the flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is too sticky, add more flour, a tablespoon at a time.

  4. 4

    Shape the Gnocchi

Divide the dough into four pieces. Roll each piece into a long rope, about ½ inch thick. Cut the ropes into 1-inch pieces. Use a fork to create ridges on each piece, if desired.

  5. 5

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Making Pesto Sauce

  1. 6

    Blend the Ingredients

In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until coarsely chopped.

  2. 7

    Add Olive Oil

With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Scrape down the sides as needed.

  3. 8

    Season the Pesto

Add salt and black pepper to the pesto, blending again to combine. Adjust seasoning to taste.

Combining Gnocchi and Pesto

  1. 9

    Mix Gnocchi with Pesto

In a large bowl, combine the cooked gnocchi with the pesto sauce. Toss gently to coat the gnocchi evenly.

  2. 10

    Serve

Serve the gnocchi pesto warm, garnished with additional Parmesan cheese and pine nuts if desired.
