Zucchini Preparation

Slice Zucchini
Wash the zucchini and slice them into spears, about 1/2 inch thick.

Season Zucchini
In a bowl, toss the zucchini spears with salt and pepper. Allow them to sit for about 10 minutes to draw out moisture.
Breading Mixture

Prepare Breading Stations
Set up three shallow dishes: one with flour, one with beaten eggs, and another with a mixture of breadcrumbs, Parmesan cheese, and Italian seasoning.

Bread Zucchini
Coat each zucchini spear first in flour, then dip in the egg, and finally roll in the breadcrumb mixture until evenly coated.
Frying

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry Zucchini
Carefully add the breaded zucchini spears to the skillet in batches. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
Marinara Sauce

In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add the canned tomatoes, oregano, and salt. Simmer the sauce for about 15-20 minutes, stirring occasionally.
