Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together all-purpose flour and salt.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture. Add the yeast mixture and olive oil. Mix until a dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  5. 5

    Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

  1. 6

    Prepare Filling

In a mixing bowl, combine ricotta cheese, cooked and chopped spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until combined.

Assembly

  1. 7

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 8

    Roll Out Dough

Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thickness.

  3. 9

    Shape and Fill

Cut the dough into squares or circles. Place a spoonful of the filling in the center of each piece. Fold and seal the edges properly.

  4. 10

    Bake the Ciu Ciu

Place the filled pieces on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.

Topping Preparation

  1. 11

    Prepare Toppings

While the Ciu Ciu are baking, prepare the topping by halving the cherry tomatoes and washing the basil leaves.

Serving

  1. 12

    Plate and Serve

Once baked, remove the Ciu Ciu from the oven. Top with halved cherry tomatoes, fresh basil leaves, and drizzle with balsamic glaze. Serve warm.
