    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Season the chicken breasts on both sides with salt and black pepper.

    Coat the Chicken

    Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dip each chicken breast first in flour, shaking off the excess, then in the egg, and finally coat completely with the breadcrumb mixture.

Cooking the Chicken

    Fry the Chicken

    In a large skillet, heat olive oil over medium heat. Once hot, add the coated chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove and place on a paper towel to drain excess oil.

Sauce Preparation

    Make the Tomato Sauce

    In the same skillet, add a little more olive oil if needed and sauté the minced garlic until fragrant. Add the crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Simmer for about 10 minutes to let the flavors meld.

Assemble and Bake

    Layer the Ingredients

    In a baking dish, spread a layer of tomato sauce at the bottom. Place the fried chicken breasts on top of the sauce. Spoon more sauce over each chicken breast and then sprinkle with shredded mozzarella cheese.

    Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

    Add Fresh Basil

    Once out of the oven, let the chicken parmigiana rest for a few minutes. Garnish with fresh basil leaves before serving.
