Salad Preparation

    Wash and Prepare Romaine

    Rinse the Romaine lettuce under cold water to remove any dirt. Shake off excess water and chop into bite-sized pieces.

    Grate Cheese

    Using a grater, finely grate the Grana Padano cheese and set aside.

    Prepare Croutons

    If using store-bought croutons, measure out 1 cup. If making homemade, cut bread into cubes, toss with olive oil, salt, and bake at 375°F (190°C) until golden brown.

Dressing Preparation

    Make Caesar Dressing

    In a mixing bowl, mash the anchovy fillets and garlic clove together until smooth. Add Dijon mustard, Worcestershire sauce, and lemon juice, and mix well.

    Emulsify Dressing

    Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined and emulsified.

    Add salt and black pepper to taste, and mix well.

Assembly

    In a large salad bowl, combine the chopped Romaine lettuce, grated Grana Padano cheese, and croutons.
