Method
Preparation
- 1
Clean the Calamari
Begin by cleaning the fresh calamari. Remove the head and innards, then peel off the outer skin. Rinse the calamari under cold water and pat dry with paper towels.
- 2
Slice the Calamari
Cut the cleaned calamari into rings about 1/2 inch thick and set them aside in a mixing bowl.
- 3
Prepare the Batter
In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.
- 4
Prepare the Wet Mix
In another bowl, whisk the eggs and buttermilk together until well combined.
Frying
- 5
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of the batter; if it bubbles vigorously, the oil is ready.
- 6
Coat the Calamari
Take a handful of calamari rings, dip them into the wet mix, and then dredge them in the flour mixture until evenly coated. Shake off any excess flour.
- 7
Fry the Calamari
Carefully place the coated calamari rings into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
- 8
Drain and Season
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain the excess oil. Season with additional salt if desired.
Serving
- 9
Serve the Calamari
Serve the fried calamari hot with lemon wedges on the side and a cup of marinara sauce for dipping.
