Directions to Make Abasolo Whiskey
Prepare the Mash
In a large pot, combine the corn and water. Heat to about 70°C (160°F) and hold for 1 hour to create a mash. Stir occasionally.
Cool and Add Yeast
After the mash has been held at temperature, cool the mixture to room temperature. Once cooled, add the yeast and stir gently to combine.
Fermentation
Transfer the mixture to a fermentation vessel. Allow it to ferment for about 5 to 7 days, or until bubbling has slowed significantly.
Distillation
Once fermentation is complete, distill the liquid using a pot still. Collect the distillate in separate fractions.
Aging
Transfer the distillate to a barrel or container with toasted oak chips and split vanilla beans. Allow it to age for at least 6 months to develop flavor.
