Cook the Pasta
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast and season with salt and black pepper. Cook until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.

Add the Corn and Wine
Stir in the roasted corn and white wine. Let simmer for about 3-4 minutes until the wine reduces slightly.

Make the Cream Sauce
Lower the heat and stir in the heavy cream. Allow the sauce to simmer gently for another 5 minutes, stirring occasionally, until it thickens slightly.

Combine Everything
Add the cooked chicken and penne pasta to the skillet, tossing to coat everything in the creamy sauce. Cook for an additional 2-3 minutes until heated through.
