Penne Poblano Ingredients

Method

Cooking Directions

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Sauté the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast and season with salt and black pepper. Cook until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.

  3. 3

    Sauté the Vegetables

In the same skillet, add the sliced poblano pepper, red onion, and minced garlic. Sauté until the vegetables are tender, about 4-5 minutes.

  4. 4

    Add the Corn and Wine

Stir in the roasted corn and white wine. Let simmer for about 3-4 minutes until the wine reduces slightly.

  5. 5

    Make the Cream Sauce

Lower the heat and stir in the heavy cream. Allow the sauce to simmer gently for another 5 minutes, stirring occasionally, until it thickens slightly.

  6. 6

    Combine Everything

Add the cooked chicken and penne pasta to the skillet, tossing to coat everything in the creamy sauce. Cook for an additional 2-3 minutes until heated through.

  7. 7

    Serve

Garnish with chopped parsley before serving. Enjoy your Penne Poblano!
