Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add Vegetables

Chop the poblano peppers and zucchini. Add them to the skillet and sauté for about 5-7 minutes until they are tender.

Incorporate Cuitlacoche and Sun Dried Tomatoes

Stir in the cuitlacoche and sun dried tomatoes, and cook for an additional 3-4 minutes.

Combine Pasta and Sauce

Add the cooked pasta to the skillet, season with salt and black pepper, and toss everything together. Cook for another 2 minutes to heat through.

Serve

Remove from heat, stir in fresh basil and parmesan cheese. Serve immediately.
