Cooking Instructions

  1. 1

    Prepare the Rice and Beans

In a medium pot, cook the white rice according to package instructions. If using canned black beans, rinse and heat them in a small saucepan until warm.

  2. 2

    Make the Mojo

In a bowl, mix together the chopped green chiles, sun-dried tomatoes, minced garlic, lime juice, salt, and black pepper. Set aside.

  3. 3

    Pan-Sear the Fish

In a large skillet, heat the olive oil over medium-high heat. Season the fish fillets with salt and pepper. Sear the fish fillets for about 3-4 minutes on each side or until golden brown and cooked through.

  4. 4

    Combine and Serve

Once the fish is cooked, pour the mojo mixture over the fillets in the skillet. Allow it to simmer for an additional 2 minutes. Serve the fish with white rice and black beans on the side, garnished with fresh cilantro.
