Motuleños Preparation

Prepare the Black Beans
In a saucepan, heat the black beans over medium heat. Season with salt and keep warm.

Fry the Tortillas
In a skillet, heat oil over medium heat. Fry each corn tortilla until crispy and golden brown. Drain on paper towels.

Fry the Plantains
Peel and slice the plantains. In the skillet, add more oil if necessary, and fry the plantains until golden and caramelized. Drain on paper towels.

Assemble the Motuleños
On each tortilla, spread a layer of warm black beans, top with a fried egg, then sprinkle with peas and diced ham. Drizzle with habanero sauce and tomato sauce. Finish with crumbled Cotija cheese.

Serve
Serve the assembled Motuleños with fried plantains on the side.
