Mole Verde Preparation

    Toast the Pumpkin Seeds

    In a dry skillet over medium heat, toast the pumpkin seeds until they start to pop and are golden brown, about 5-7 minutes. Stir frequently to avoid burning.

    Prepare the Tomatillo Sauce

    Remove the husks from the tomatillos and rinse them under water. In the same skillet, add a little olive oil and sauté the chopped onion and garlic until translucent. Add the tomatillos and green chili, and cook until softened, about 5 minutes.

    Blend the Ingredients

    In a blender, combine the toasted pumpkin seeds, sautéed vegetables, hoja santa leaves, vegetable broth, salt, and pepper. Blend until smooth. If the sauce is too thick, add more broth to reach desired consistency.

    Cook the Mole Verde

    Transfer the blended mole verde back to the skillet and simmer over low heat for about 10 minutes, stirring occasionally. Adjust seasoning with additional salt and pepper if needed.
