    Prepare the Chiles

    Remove the stems and seeds from the dried chiles. Toast them lightly on a pan over medium heat for about 2-3 minutes until fragrant. Soak the toasted chiles in hot water for 15 minutes until softened.

    Sauté Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic cloves, sautéing until the onion is translucent.

    Blend the Base

    In a blender, combine the soaked chiles, sautéed onion and garlic, tomatoes, cinnamon stick, cumin seeds, black peppercorns, and chicken broth. Blend until smooth.

    Cook the Mole

    Pour the blended mixture back into the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally. Add salt and sugar to taste.

    Add Chocolate

    Stir in the Oaxaca chocolate and sesame seeds. Let it simmer for an additional 10 minutes until the chocolate is melted and incorporated.

    Final Adjustments

    Taste the mole and adjust seasoning with more salt or sugar if needed. Remove the cinnamon stick before serving.
