Preparation

    Prepare the Black Bean Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add cooked black beans and chopped ancho peppers. Season with salt and pepper. Simmer for about 10 minutes, then blend until smooth.

    Prepare the Tortillas

    In a skillet, lightly warm each corn tortilla until pliable. Remove from heat.

    Stuff the Tortillas

    Place a portion of the Panela cheese in the center of each warm tortilla. Roll them up to enclose the cheese.

    Assemble the Enfrijoladas

    Spread a layer of the black bean sauce on a plate. Place the stuffed tortillas on top and smother with more bean sauce. Sprinkle with Cotija cheese and drizzle with Mexican cream.

    Serve

    Serve hot, garnished with additional Cotija cheese and a drizzle of Mexican cream if desired.
