Grain Bill

    Mashing

    Heat the filtered water to 67°C. Add crushed US 2-Row Pale Malt and Crystal Malt 60L, stirring thoroughly to avoid clumps. Maintain mash temperature at 66–67°C for 60 minutes to allow starches to convert into fermentable sugars.

    Mash Out and Sparge

    Raise mash temperature to 75°C for 10 minutes, then sparge slowly with hot water (around 75°C) until the desired pre-boil volume is reached.

Hops

    Boil and Bittering Addition

    Bring the wort to a rolling boil. Once boiling, add the bittering Cascade hops and boil for 60 minutes.

    Flavor Addition

    At 15 minutes remaining in the boil, add the flavor Cascade hops. This contributes citrus-forward hop flavor characteristic of Sierra Nevada Pale Ale.

    Aroma Addition

    At flame-out (end of boil), add the aroma Cascade hops. Allow the hops to steep for 10–15 minutes before chilling.

Yeast & Water

    Cooling and Fermentation

    Rapidly chill the wort to 18–20°C using a wort chiller. Transfer to a sanitized fermenter, aerate well, and pitch the American Ale yeast.

    Primary Fermentation

    Ferment at 18–20°C for 7–10 days, until final gravity is stable and fermentation activity subsides.

  3. 8

    Conditioning and Packaging

    Condition the beer for an additional 7 days at cooler temperatures (around 15°C). Carbonate to approximately 2.5 volumes of CO₂ and package in kegs or bottles.
