Pizza Dough

Activate Yeast
In a large bowl, combine warm water and sugar. Sprinkle the yeast over the top and let sit for 5–7 minutes until foamy, indicating the yeast is active.

Mix Dough
Add olive oil and salt to the yeast mixture. Gradually stir in the bread flour until a shaggy dough forms.

Knead and Rise
Turn the dough out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise for 1–1.5 hours or until doubled in size.
Spicy Red Sauce

Cook Sauce
Heat olive oil in a small saucepan over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Stir in crushed tomatoes, red pepper flakes, oregano, salt, and black pepper.

Simmer
Reduce heat to low and simmer the sauce for 15–20 minutes, stirring occasionally, until slightly thickened. Remove from heat and allow to cool.
Toppings and Assembly

Prepare Meats
Remove Italian sausage from its casing and cook in a skillet over medium heat until browned and fully cooked. Drain excess fat and set aside. Tear prosciutto into smaller pieces and slice sopressata if needed.

Preheat Oven
Preheat the oven to 500°F (260°C). If using a pizza stone or steel, place it in the oven to heat for at least 30 minutes.

Shape Dough
Punch down the risen dough and stretch or roll it into a 14-inch round. Transfer to a floured pizza peel or parchment paper.

Assemble Pizza
Spread an even layer of spicy red sauce over the dough, leaving a 1-inch border. Sprinkle mozzarella evenly over the sauce, followed by parmesan. Distribute cooked sausage, sopressata, and prosciutto across the pizza. Finish with a light drizzle of olive oil and a sprinkle of dried oregano.

Transfer the pizza to the hot oven and bake for 10–14 minutes, or until the crust is golden and the cheese is bubbly and lightly browned.

Remove pizza from the oven and immediately garnish with fresh basil leaves. Slice and serve hot.
